Did you know that scallops have up to sixty eyes that line it's mantle and help it detect light. You will never find them in fresh water but Marco Polo found them for sale in Chinese markets as early as 1280. China remains the largest producer of scallops with Russia falling in second.

1.   The Japanese name, edamame, literally means, "stem bean" (eda = "branch" or "stem" + mame = "bean"), because the beans were often boiled while still attached to the stem[1]. Edamame is called mao dou in China.

2.   Edamame is of Chinese origin and was developed in Japan especially for eating out of the pod. Edamame is a variation on the same yellow and black field soybean that is transformed into many popular soy products such as tofu, miso, and soymilk. Edamame is often referred to as natures perfect food because it contains all 9 essential amino acids and this makes edamame a complete protein source like meat or eggs[2]
